You wouldn’t believe with how many dishes the caramelised carrot can go with. If you like carrots, you’ll Love this! Actually, I’m pretty sure you’ll like it even if you’re not the biggest fan of carrots 😉 in my case the side dish turned into the actual dish haha
I had mine with spinach&lentil vegan burger, baked potato with a little sriracha, lettuce and after I took the picture I added some cucumber too because I wanted more greens.
This makes 2 large side dishes:
- 5 big carrots
- 1 1/2 tbs sugar( you can add more if you prefer is sweeter)
- 2 tbs olive oil
- 3-4 bay leaves
- Salt and pepper
Boil the carrots( save about 5-7 spoons of the water they boiled in, you’ll need it later) then mash them.
Put the sugar in a pan and caramelise it on low heat. When the sugar is melted add the mashed carrots, dried bay leaves and oil. Mix then add the water you saved with the salt and pepper. Stir it for about 3 minutes and it’s done.
