So many people try to stay away from potatoes because they think potatoes are high in calories! Surprise surprise: they’re not; in fact you can lose weight by eating potatoes! It’s the stuff like butter, oil, mayo and other sauces that makes them unhealthy. Carbs( good carbs 😉)are fuel for your body!
I like to call this a guilt free meal(even though I did add 2tbs of oil but you can always skip that step)
This makes 2 portions:
- 3 big potatoes
- 2tbs olive oil(or coconut oil)
- Black pepper, chilli flakes, turmeric, garlic powder(or fresh garlic), paprika( add everything to your taste)
Wash the potatoes and cut them into big chips. Put them in a large bowl. Add the oil, seasonings and toss them until combined. Arrange the chips on prepared baking sheets. Put them in the oven for about 35-45 mins at 200C, and rotate the sheets halfway through( check towards the end to see if they’re done, we want crispy chips Not burnt chips haha)
- 1 avocado
- 1/4 lemon juice
- Salt, pepper, chilly flakes
- 3-5 tbs soy/coconut yogurt
- 1 tomato
- 1 medium onion
Using a fork, mash the avocado and put in a bowl. Add the lemon juice, salt,pepper, chilly flakes, yogurt. Chop the tomato and onion in small pieces and add to mix. Mix until combined.
